- Heat a pan add moong daal and fry it without oil.only dry roast then keep aside and wash properly..
- Heat the oil in a pressure cooker. Roast kaju and peanut in oil and keep aside.
- Temper with bay leaves,cardamom, dry red chilli, clove, cinnamon when it splutters, add hing, potatoes and green chillies. Fry till potatoes are light pink in colour. Now add ginger paste and saute.
- Add rice and roasted daal saute it 3-4 minuts. Add all powder spices
- Pour some water and stir well till all spices and daal chawal well coated in spices and nice aroma comes out.Be careful, not to burn the daal.
- Now add some water and stir,salt and sugar mixed it add ghee. Now close the lid and cook in pressure for 2 whitsle.
- Off the burner. Now open the lid of pressure cooker and add roasted kaju, peanuts and mixed it well.close the lid.for a while.
- Serve with fried papad,chutney,mixed vegetables, salted curd,ghee and mango pickles
- Bhuni khichadi is eaten dry and not semi- solid or thin as normally eaten.
